Bitter Gourd
Bitter Gourd is a common vegetable grown all over India.
It is widely known for its medicinal properties. It contains a plant insulin which has been highly beneficial in lowering blood and urine sugar levels. It should be included in the diet of Diabetics.
The seeds may be powdered with a mortar and pestle and added to food. Often it is taken as a juice in the morning on an empty stomach. It is bitter in taste.
Bitter gourd is rich in Vitamin A, B1, B2, C and Iron.
It has been known to help hypertension, eye problems and respiratory weakness.
A teaspoonful of root paste mixed with equal amount of honey every night gives relief with asthma and bronchitis.
It is said that it is an antidote for alcohol intoxication.
To reduce the bitterness steep the peeled gourd in salted water before cooking.
